These whole food plant-based desserts are super delicious and easy to make–and, of course, there’s no baking! If you’re going to make these, and I suggest you do, keep a few things in mind.
- As you can see in the video thumbnail, and the picture of the finished product below, I covered my chocolate oatmeal drops in strawberries. This is highly recommended, as these desserts are super rich and creamy- a few strawberries, cherries, or other fruits give them some much needed balance.
- I used extra dark cocoa powder because that’s the look I wanted. If you want something that looks more like milk chocolate, use a lighter color cocoa powder.
- These things are delicious! However, I think they can be even better. Next time I make them I’m going to add some nuts to the recipe, perhaps some crushed hazelnuts, kind of like a Ferrero Rocher! I’m also going to get some dried, shredded coconut to roll them around in, which will improve both the taste and the appearance of the chocolate balls.
- Finally, if your feeding these to kids, roll them in candy sprinkles first–they love the colors against the black chocolate balls!
No-Bake Chocolate Peanut Butter Oatmeal Drops
This is the original recipe from the China Study Cookbook
Equipment
- skillet
- mixing bowl
- cupcake papers (optional) (can substitute with parchment paper)
Ingredients
- 1 cup unsweetened nondairy milk I used almond milk
- 1/2 cup peanut butter I used creamy peanut butter, but I think crunchy would be better.
- 1/3 cup raw cane sugar Any sugar will work
- 3 TBLSP cocoa powder I used extra dark cocoa powder. Use a lighter color powder to get a more milk chocolate look.
- 2 cups rolled oats
Instructions
- Put almond milk, sugar, and peanut butter in a skillet and cook at low heat until sugar and peanut butter have dissolved completely. 1 to 2 minutes.
- Stir in cocoa powder until evenly incorporated into mix.
- Mix in oats and cook on low heat for about a minute.
- Make 12 balls and set in cupcake papers or on a sheet of parchment paper.
- Put in fridge for about an hour. Serve Chilled.
