Quick & Easy Mushroom and Broccoli Rice Noodles

Looking for a quick and easy meal that tastes great? If you can chop an onion you can knock out these noodles in about 20 minutes!

Quick Tips!

  1. Steam the broccoli right in the frying pan with the onions and garlic–they’ll taste great!
  2. Don’t be checking out the cute kittens in your Instagram feed while steaming up the broccoli — it just takes a minute or two — and nobody like mushy broccoli!
  3. You can make this dish with any noodles, but rice noodles are very starchy and will make a nice saucy, thick bowl of noodles (without any added oils or other sauces).
  4. The recipe is only for 1 serving because it’s usually just a quick meal for my weeknights. If you’ve got friends or family, be sure to double or triple the recipe.

This mushroom, broccoli, and rice noodle dish is super simple to make, wholly delicious, and packed with nutrients that do a body good!

Ingredients

  • 5 cloves minced garlic

  • 1/2 cup chopped onion

  • 1 cup chopped shiitake mushrooms (or any kind you have on hand)

  • 1 cup chopped broccoli

  • 1 cup cooked rice noodles

  • 1/2 teaspoon light soy sauce

Directions

  • Mince garlic and onions. Chop broccoli and mushrooms.
  • Add rice noodles to boiling water.
  • While noodles are cooking, saute onions and garlic until nice and brown. If you watched the video, you’ll see that I did not use any oil when sauteing my onions and garlic. Just cook until they start to brown, move them to the side, and then add a little water to the pan. All the caramelized flavor will come off the pan and soak right into your onions and garlic! If you do use oil, say 1 tablespoon, you’ll be adding 119 calories and 19 grams of fat!
  • Add mushrooms and cook down until soft and moist. Add water to pan as needed (watch video below).
  • Add broccoli to the pan and mix around to soak up some juices (and flavor). Then cover with a lid and steam for 1 to 2 minutes. Check the softness of the broccoli by sticking a fork in it–it should be soft but not mushy. It should still be a vibrant green color.
  • Add soy sauce and noodles and mix thoroughly.
  • Plate and enjoy!
