Crispy Tofu and Quinoa Tacos: Vegan and WFPB

Is it Tuesday? Cause we’ve got tacos! These vegan whole food plant based tacos have crispy tofu, creamy avocado, healthy quinoa, and protein rich black beans– plus a special taco seasoning that you can learn to make in just a few short minutes. Enjoy!

Crunchy Tofu and Quinoa Tacos: Vegan and WFPB

These vegan tacos have a great blend of crunchy air fried tofu chunks and smooth and creamy avocados. The filling is a quinoa and black bean mix that has delicious homemade taco seasonings! All wrapped up in soft flout tortillas, these tacos will please anyone you share them with!

Equipment

  • rice cooker or pot to boil water
  • skillet

Ingredients

Taco Seasoning

  • 1 tbsp cumin
  • 1 tbsp red pepper flakes
  • ½ tbsp garlic powder
  • ½ tbsp paprika
  • `1 tsp black pepper
  • 1 tsp salt

Taco Stuffing

  • 1 cup dry quinoa
  • 1 15-oz can black beans drained
  • 1 medium-sized onion chopped
  • 6 cloves garlic minced
  • 1 small tomato minced (substitute 1 tbsp tomato paste if desired)

Garnish

  • 1 avocado diced
  • ½ cup tomatoes diced
  • 1 pack hard tofu get the driest looking tofu you can find

Instructions

  • Lay your tofu in a pan or other dish. Place paper towels on top and bottom of tofu. Place heavy object on top of tofu. Let sit for at least 30 minutes. This works best if you have bought the hardest, driest tofu you can find. You can also buy a tofu press if you plan to cook a lot of crunchy air fryer tofu recipes.
  • While the tofu is being pressed, cook your quinoa. I use a rice cooker with a 1 cup quinoa to 2 cups water ratio.

While the tofu is pressing and the quinoa is cooking, do all of your chopping and mincing. I like to do this before I start cooking, so I have all of my ingredients ready to go.

  • Chop Onions
  • Mince Garlic
  • Mince Tomato (you can substitute tomato pasted if you prefer).
  • Dice Avocado

Cook Taco Filling

  • Sautee onions and garlic until onions are soft and light brown (3 to 5 minutes)
  • Add Tomatoes and a little water and sauté for another 3 to 4 minutes. Cook slowly to let the flavors soak into each other.
  • Add taco spices (cumin, chili flakes, paprika, garlic powder, salt, pepper).
  • Add Quinoa
  • Add Black Beans
  • Add 1 cup of water and simmer on a low heat until most water has steamed out and you are left with a nice fluffy taco stuffing that won't leak water into your tortilla (about 7 to 10 minutes).
  • While your taco stuffing is slowly simmering, cube and then dust your tofu with the same spices you put in your taco stuffing. Cook in your air fryer for about 10 minutes at high heat–until nice and crispy.

Assemble and Eat

  • Scoop a layer of taco filling on a tortilla. Then add crispy tofu, diced avocado, chopped tomatoes, and a squeeze of lime.
  • Enjoy as assembled or add your favorite hot sauce!
